Old Fashioned Pasta Salad

 



Ingredients

  • 2 cups ditalini pasta (or a macaroni pasta)
  •  cups mayonnaise
  • 2 stalks celery, finely chopped
  • 1/4 c. to 1/2 c. diced red or white onion
  •  tablespoons mustard
  • 1 tablespoon onion powder
  • salt and pepper, to taste
  • 4 large hard-boiled eggs, chopped
  • paprika, for garnish


Instructions

  • Prepare the pasta according to package directions. Rinse under cold water and set aside to drain well.
  • In a medium bowl, whisk together the mayonnaise, celery, green onion, mustard, onion powder, salt and pepper.
  • Place the drained, cooled pasta in a large bowl. Add the mayonnaise mixture and stir into the pasta until well combined. Gently stir in the chopped egg. Sprinkle with paprika, cover with plastic wrap, and chill for at least a couple of hours before serving.

Homemade Hershey’s Chocolate Syrup



Homemade Hershey’s Chocolate Syrup Recipe 


Makes about 16 ounces (2 cups)

Ingredients:

3/4 cup cocoa powder

1 1/4 cups water

1 1/2 cups sugar

1 1/2 teaspoons vanilla extract

Dash salt


Directions:

Use a big saucepan – at least 2 quarts. This will expand when boiling, and overflows will make a big mess on your stove top! I use a 3-quart saucepan.

Combine the cocoa powder, water, sugar and salt in a saucepan over medium heat. Mix with a whisk until smooth.

Stir constantly with a whisk or a wooden spoon until it boils.

Allow it to boil for 1-2 minutes.

Remove from heat.

Add vanilla.

Syrup will be very thin/watery. Allow to cool completely and it will thicken to about the same consistency as Hershey’s syrup.

Store the syrup in a mason jar or any other container. It will keep for several weeks in the fridge. If you want to be really sneaky, pour the cooled syrup into an empty or almost-empty Hershey’s syrup container and see if anyone notices the difference!

Foraging Wild Purple Violet Flowers










Next on our list of foraging is wild purple violet flowers.💜💜💜💜💜

They can help support restful sleep and is a nice addition to a gentle sleep blend. Violet is moist and cooling and the leaves ease inflammation, and when used externally, soothe skin irritations and swelling. It has an affinity for the lymphatic system and can promote healthy lymphatic function. And packed with vitamins every inch of this plant is edible and wonderful for you!

Wild violets (not to be confused with African violets) are the tiniest, most delicate, light purple flowers 
and they’re edible! 

CAUTION: If you harvest violets for food, make sure they are from an area never sprayed or treated!

TIP: You'll want to save this recipe to use when your violets make their annual entrance!

Making wild violet simple syrup is super easy. It takes a full 24 hours, but 99% of that time is for steeping the flowers. The little bit of hands-on time is as easy as making herbal tea!




Wild Violet Simple Syrup
Ingredients
4 cups of wild violets
2 cups boiling water
2 cups organic evaporated cane juice
3 to 4 drops of lemon juice

Supplies needed:
a quart or 1/2 gallon-size glass jar
a wooden spoon
a large fine-mesh sieve
a whisk

Instructions:
Collect wild violets.
You really only need the flower petals. A few stray stems and receptacles (base of the flower) will not affect the flavor of the syrup.

Pour boiling water over the wild violets.
The ratio of flowers to water is 2:1. Example: 4 cups of wild violets to 2 cups of boiling water. The water will  immediately begin to change color!

Use a wooden spoon to smash the violets down into the water. The petals will shrink in size considerably, so make sure they’re all submerged.

Steep the violets for 24 hours.
Place a lid on your jar and let the violets steep for 24 hours.  The pigment begins to come out of the petals rather quickly, but don't  skip the full 24-hour steeping time, though. The longer the petals steep, the more purple pigment is drawn out, and the more depth of color the finished wild violet syrup will have.

Strain.
After 24 hours, pour the violet “tea” into a fine-mesh strainer. You should still have 2 cups of liquid.

Press out all the “tea”.
Using clean fingers, press all of the blueish-purple “tea” out of the petals. The spent petals can be added to your compost pile.

Note how blue the wild violet “tea” is, not very purple at all. That will change later with lemon juice.

Combine the wild violet “tea” with 2 cups of organic evaporated cane juice.

Place it on the stove on low-medium heat. Whisk the sugar and “tea” together while the mixture heats. DO NOT BOIL!

If purple syrup is what you want, it is crucial that you keep an eye on your syrup and don’t allow it to boil. Boiling the liquid destroys the beautiful color. The sugar will dissolve in the warm liquid without boiling.

Add 3 to 4 drops of lemon juice.
As soon as the cane sugar is completely dissolved, remove the syrup from the heat and add 3 or 4 drops of lemon juice to it. This causes a chemical reaction that makes the color of the liquid go from blue to a bright purple.

The more lemon juice you add, the lighter the color of the wild violet simple syrup.

Using a funnel, pour the finished wild violet syrup into a bottle or jar. 

You can store your wild violet simple syrup in the fridge for up to 2 weeks — if it lasts that long! Pour it over waffles or pancakes, add it to sparkling water for a bubbly floral beverage, flavor your kombucha with it, or add it to a mixed beverage!

CAUTIONS: 
Violets actually have many look-alikes, many of which are inedible or poisonous, so only harvest them when the flowers are present and you are 100% sure that you have a violet. Please reference a reliable plant identification guide when gathering any wild edible or medicinal herb.

2 12 ounce bags of raw broccoli

1/2 cup of red onion chopped

1 cup of mild cheddar cheese shredded

1/2 cup of cooked bacon chopped (can use bacon bits)

1 cup of creamy coleslaw dressing (I use Hidden Valley)


Here is the super easy part!


In large bowl, combine all ingredients, mix well and chill in fridge for 2 hours and your done!


The best thing about this easy broccoli salad is you can add more dressing, more cheese, etc.


This serves 4-6. Enjoy!

Veggie Party Pizza

 





Ingredients

  • 2 packages crescent roll dough
  • 2 250g packages cream cheese, softened
  • 1 28g package Ranch dressing mix
  • 1 cup mayonnaise
  • 2 cups cauliflower florets
  • 2 cups broccoli florets
  • 3 green onions, sliced
  • 2 cups diced or cherry tomatoes, halved
  • 1 cup cheddar cheese, shredded

Instructions

  1. Preheat oven to 375F.
  2. Spread crescent roll dough on a cookie sheet. Pinch together the seams to make into one big dough rectangle. Pinch around the edges to make the crust.
  3. Bake crescent roll dough for 12 minutes or until golden brown. Set aside to cool.
  4. Add cream cheese, ranch mix and mayonnaise to a bowl. Cream together with an electric mixer on low speed until combined. Spread on baked crust.
  5. Spread veggies evenly over the ranch dressing. Top with cheddar cheese.
  
Cut into slices and serve cold. Refrigerate any uneaten portions.

Dandelion Uses



The quintessential garden and lawn weed, but every part of this common edible weed is tasty both raw and cooked, from the roots to the blossoms.Dandelion leaves can be harvested at any point in the growing season, and while the smaller leaves are considered to be less bitter and more palatable raw, the bigger leaves can be eaten as well, especially as an addition to a green salad. If raw dandelion leaves don't appeal to you, they can also be steamed or added to a stir-fry or soup, which can make them taste less bitter. The flowers are sweet and crunchy, and can be eaten raw, or breaded and fried, or even used to make dandelion wine. The root of the dandelion can be dried and roasted and used as a coffee substitute, or added to any recipe that calls for root vegetables.

Fully Loaded Baked Potato Salad



One 5 pound bag medium Russet Potatoes

1 cup sour cream

1/2 cup mayonnaise

1 package of bacon, cooked and crumbled

1 small onion, chopped

Chives, to taste

1 1/2 cups shredded cheddar cheese

Salt and pepper to taste

1. Wash the potatoes and poke holes in them with a fork. Bake at 350 degrees for about an hour or until fork tender.

2. Cool and cut the potatoes into bite sized chunks.  I put them in a separate bowl and once they cooled enough I put them in the fridge to cool all the way. This gives them an excellent texture and prevents the dairy ingredients from getting hot or the cheese from melting. If you are serving this salad hot then you don’t need to cool the potatoes, just skip that step!

3. Mix the mayo and sour cream together in a bowl. Add to the potatoes, then add the onions, chives,  and cheese. Salt and pepper to taste – I use a pepper grinder and a sea salt grinder for EVERYTHING so I never know exactly how much of either I put in. I think the taste is far superior to just using regular table salt and pepper.

4. Top with extra shredded cheese, bacon, and chives, and serve!

This is a simple and inexpensive side dish for any meal but especially great to take to a barbecue.

Herbs and Tomato Salad

Ingredients


  • 6 to 8 ripe tomatoes
  • 4 green onions
  • 1 cup extra-virgin olive oil
  • 3 to 4 tablespoons balsamic vinegar
  • 2 tablespoons brown sugar
  • Salt and freshly ground black pepper
  • Handful fresh parsley leaves, lightly chopped
  • 12 fresh basil leaves, chiffonade
  • Cooking Directions

    Cut the tomatoes into 4 wedges, then cut the wedges in half and add to a bowl.
    Lop off the tops of the green onions, then slice the white and mostly light green parts really thin. Add to the tomatoes.
    Add the olive oil, balsamic vinegar, brown sugar, dash of salt and pepper to a jar. Screw on the lid and shake to combine.
    Pour the dressing over the tomatoes and toss.
    Add the herbs and gently toss to combine. Cover and refrigerate for a few hours before serving.

    Marinated Tomato Salad with Herbs and Spices



    Ingredients
    3 to 4 tomatoes, cut into bite sized pieces
    1/4 cup chopped red onion
    2 tablespoons chopped fresh parsley
    1 tablespoon chopped fresh mint
    3 tablespoons olive oil
    2 tablespoons red wine vinegar
    2 cloves garlic, finely chopped
    1/2 teaspoon mustard seed
    1/2 teaspoon ground cumin
    1/4 teaspoon turmeric
    kosher salt and freshly ground black pepper to taste

    Directions
    Cut up the tomatoes and place them in a bowl.
    Add the red onion, parsley and mint and toss ingredients to distribute them
    evenly.
    Pour in the olive oil and wine vinegar and toss ingredients.
    Add the garlic, mustard seed, cumin, turmeric and salt and pepper to taste. Toss
    ingredients.
    Let rest for about 15 minutes before serving

    Tomato-Watermelon Salad

    Watermelon Tomato Salad

    ingredients

    • 8 cups 1 1/4-inch chunks seedless watermelon (about 6 pounds)
    • 3 pounds ripe tomatoes (preferably heirloom) in assorted colors, cored, cut into 1 1/4-inch chunks (about 6 cups)
    • 1 teaspoon (or more) fleur de sel or coarse kosher salt
    • 5 tablespoons extra-virgin olive oil, divided
    • 1 1/2 tablespoons red wine vinegar
    • 3 tablespoons chopped assorted fresh herbs (such as dill, basil, and mint)
    • 6 cups fresh arugula leaves or small watercress sprigs
    • 1 cup crumbled feta cheese (about 5 ounces)
    • 1/2 cup sliced almonds, lightly toasted

    preparation

    Combine melon and tomatoes in large bowl. Sprinkle with 1 teaspoon fleur de sel and toss to blend; let stand 15 minutes. Add 4 tablespoons oil, vinegar, and herbs to melon mixture. Season to taste with pepper and more salt, if desired.
    Toss arugula in medium bowl with remaining 1 tablespoon oil. Divide arugula among plates. Top with melon salad; sprinkle with feta cheese and toasted almonds and serve.
