Salsa and Lime Pork Chops

Cooking Time: 8.5 hours (slow cooking), 2-3 hours (Slow cooker set to high)

Ingredients Required

2 x Pork Loins (84g each so total of 168g Pork Chop)
Salsa - 75g
Lime Juice - 3 TBSP
½ tsp Ground Cumin
½ tsp Garlic Powder
½ tsp Salt
½ tsp Ground Black Pepper
Calorie Free Cooking Spray


1 - Trim the fat from the pork chops (if you want more fat in this meal you can leave it on - it also adds for flavour if you cook it with the fat on but remove it prior to eating it's your call).

2 - In a small bowl add the cumin, garlic powder, salt and pepper

3 - Rub the spice mixture onto both sides of the pork chops

4 - Get a frying pan and coat with calorie free cooking spray

5 - Add the chops and fry each side for 5 minutes on a medium heat (they'll be lightly browned but not completely cooked)

6 - Spray the insides of your slow cooker with the calorie free cooking spray

7 - Add the pork chops then pour on top the salsa and lime mixture (if your slow cooker is small you may need to add the pork, then some salsa and lime saving some for the next layer or pork)

8 - Slow cook on low for 8 hours (if you don't have this long use high to 2-3 hours instead), it's worth the wait!

This recipe is awesome and the meat falls apart (so be careful when removing it from the slow cooker!) and is so tender and flavoursome you'll never cook pork quickly again!

Place the pork chops onto a plate and then garnish with the salsa and lime mixture and serve with vegetables of your choosing.
