Chocolate Chip Rolo Cookies


2 1/4 c. Flour
1 tsp Baking Soda
1 tsp Salt
2 sticks Butter, room temp
3/4 c. Sugar
3/4 c. Brown Sugar, packed
1 tsp Vanilla
2 Eggs, room temp
1 c. Mini Semi-Sweet Chocolate Chips
36 Rolo candies, unwrapped


Preheat oven to 375°.
In a large bowl, combine flour, baking soda, & salt. Whisk to combine & set aside.
In another bowl, beat together butter, sugars, & vanilla until creamy. Add eggs, one at a time, beating well after each addition.
Using a paddle attachment (or whisk), slowly incorporate flour mixture into butter/sugar mixture. Stir in mini chocolate chips.
Drop rounded tablespoon portions of dough onto prepared cookie sheets. Push 1 Rolo candy into each mound & shape dough around to fully cover the candy. Form into a ball & replace on cookie sheets.
Bake in preheated oven for 9 - 12 mins until lightly golden brown. Cool for 5 minutes on cookie sheet before transferring to a rack.
